My First Post! I need to log my food cooking experiences somewhere!
Just the past week at Whole Foods market, you can pick up an amazing Hampshire Bone-In Pork Loin Chop or Roast at $4.99/#. I opted for the chops, but my new found butcher friend turned me onto the roast. Center Cut, at that!
I also saw some nice apples, which are coming into season. So many varietals to choose from, but I ended up taking the Janagold variatel @ $2.49/#. Crisp, sweet, and slightly tart, I decided to pair them with a nice leek and roasted red pepper chutney for the pork roast.
I also saw some nice organic broccoli and decided to compose with it all together.
I picked up the usual potatoes, cream, and cheese from Costco. To me, nothing beats Yukon gold for mashed potatoes, but the russets looked a lot better today. I also picked up a nice wedge of Camboloza Cheese from their cheese field.
So its, bleu cheese, apples, and pork.... for a meal that pretty much goes under $35 to feed 7, with plenty of sides left over.
Onto the recipe:
For the Slow Roast - Salt, Pepper, Dijon, Garlic @ 300F
Apple Chutney - Apples, Leek, Onion, Roasted Red Pepper, Salt, Palm Sugar, Apple Cider Vinegar, Water, Chili Flakes. Small Dice all, saute all veg to sweat, then add apples, season, add liquids, and simmer 15-30 minutes until soft.
Broccoli - Blanch, Roast in Oven 400F w/ Olive Oil, Butter, Salt, Pepper
Mashed Potatoes - Cream 1pt. or 1.5 , butter 3-4 tbl, camboloza 4-6oz. to 5# potatoes.
This has got to be one of the best damn pork dinners i've had. Hands down to a VERY VERY tasty cut of meat from Whole Foods Market. You pay for what you get, and in this case, not bad of a price for exceptional quality pork.
